Equipment
- Electric mixer
- Large Mixing Bowl
- Baking tray
- Oven
Ingredients
- 1 kg T 55 Flour or all-purpose flour
- 25 g salt
- 7 g yeast
- 150 g Sourdough
- 25 g s 500
- 50 g Olive oil
- 600 g water
Instructions
- Mix all the ingredients
- Use Electric mixer machine speeds first 5 minutes
- After that electrified machine speeds2 8minutes (minimum)
- Remove the mixture from the machine & scale the dough Divide to 1 ½kg into thirty small portions & keep for proofing 1h 30 min
- Bake at 200°C degrees for 16 to 18 min (use steam 25 sec)
